Ice cream and soy sauce may seem like an unexpected combination, but when you pour soy sauce over vanilla ice cream, it quickly takes on a flavor similar to caramel or mitarashi dango.

Soy sauce on vanilla ice cream

I tried it with over 10 different types of soy sauce.

In order to delve deeper into the compatibility of ice cream and soy sauce, we lined up a number of soy sauces and did a taste comparison. Before the taste comparison, we tried to predict which soy sauce would go best with vanilla ice cream. Perhaps a sweet soy sauce would go well with it? Or perhaps a light soy sauce would bring out the sweetness of the ice cream? A soy sauce that is too strong would be bad. Various opinions emerged.

Then we tried it. The sweet soy sauce had a strong sweetness and aroma, which overpowered both the ice cream and the soy sauce. On the other hand, the rich soy sauces, such as Saishikomi and Tamari, were excellent, and went perfectly with the vanilla ice cream!

Once we had a general idea of the trends, we compared the soy sauces further and found that there were subtle but definite differences in flavor depending on the soy sauce, such as some soy sauces having a stronger caramel flavor and others having a stronger mitarashi dango flavor.

We've selected five of the most popular flavors from our staff, so you can enjoy them at home.

Introductory course

This is the one we recommend for first-timers to try first. We think you'll enjoy the combination of vanilla ice cream and soy sauce without any discomfort.

Handmade, two-stage brewing, and aged for three years / Okamoto Soy Sauce (Hiroshima Prefecture)

All ingredients, including soybeans, wheat, and salt, are domestically produced. It's rich, soft, and has no peculiar taste, making it a great introductory drink. Located in Osakikamijima, Hiroshima Prefecture, which can only be reached by ferry, this brewery is unique in that all of its sake is brewed in wooden barrels.

This mild and easy-to-use soy sauce is also delicious when poured over vanilla ice cream. It instantly transforms it into a surprisingly sweet mitarashi (sweet soy sauce) flavor. Just a spoonful of this soy sauce over your regular vanilla ice cream creates a sophisticated dessert with a perfect balance of sweet and salty flavors.

Intermediate edition

For those who want a stronger flavor and are looking for a more tolerant taste, these are the two bottles that will allow you to fully experience the rich, full-bodied flavor and aroma of soy sauce.

Tsurusho / Yamaroku Soy Sauce (Kagawa Prefecture)

After aging for about two years, the soy sauce is returned to the barrel and brewed again for another two years. This soy sauce is the ultimate in deep, rich flavor and mellow taste.

When combined with vanilla ice cream , it creates a mitarashi flavor that perfectly brings out the richness and saltiness! This soy sauce dessert, which can also be found at Yamaroku Chaya in Shodoshima, is an unforgettable taste once you try it. Vanilla ice cream alone isn't enough! You'll be hooked, wanting to pour some Tsurusyo sauce on it!

Saishikomi soy sauce / Ariya (Gunma Prefecture)

Using domestically produced soybeans and wheat, the soy sauce is naturally fermented for three years. The brewery values carefully selecting ingredients and creating soy sauce that brings out the natural flavor of the ingredients.

When you combine vanilla ice cream with re-brewed soy sauce, it often ends up with a mitarashi or caramel flavor, but this "Saishikomi Soy Sauce" has a coffee flavor! It's sure to be a slightly different way to enjoy it than other re-brewed soy sauces .

Advanced level!

A slightly unexpected choice is Shiro Tamari and Miso Tamari. While they have a modest flavor, you'll enjoy an addictive taste that's different from any other combination you've had before.

Shiro Tamari / Nitto Brewery (Aichi Prefecture)

Made with only wheat, salt, and shochu, Shiro Tamari brings out the color and flavor of the ingredients, allowing you to fully enjoy the sweetness of wheat.

When combined with vanilla ice cream, it becomes sweeter and slightly salty, creating a salted caramel flavor. It's a little different from the mitarashi flavor, and has a flavor that can only be tasted with Shiro Tamari. Be sure to experience the Western atmosphere with Shiro Tamari and vanilla ice cream.

Miso Tamari / Ishimagoto Honten (Akita Prefecture)

Miso Tamari is packed with the umami and sweetness of aged miso. The umami extract extracted from long-aged miso goes perfectly with vanilla ice cream.

A spoonful on vanilla ice cream will release a rich, caramel-like flavor. You 'll definitely become addicted to the mellow caramel flavor.

Tips for enjoying soy sauce with ice cream

① For ice cream, "Super Cup" is the best! Considering availability and price, it's the best so far. If the ice cream is too expensive, I think the compatibility with soy sauce will be a little different.

② Be careful not to apply too much ! If you apply too much from the beginning, there is no going back. Try applying a little at a time.

3. Enjoy the change in flavor as you blend the soy sauce ! Some soy sauces taste great just as they are, while others taste even better when blended with a spoon. Try to find your favorite balance.
