5 wooden barrels of soy sauce from Shodoshima
Shokunin Shoyu No.
This is the classic re -brewed sake!
After aging for about two years, the soy sauce is returned to the barrel and brewed again for another two years. This soy sauce has a deep richness and mellowness that is the ultimate. It can be used on vanilla ice cream, sashimi, or meat as a wasabi soy sauce.
Made with dark soybeans, it has a light yet sharp taste
Using Tanba black beans, we have brought out a light and sharp umami flavor and a subtle sweetness and richness that lingers in your mouth. You can enjoy the rich aroma and beautiful color. It can be used in general as a soy sauce, and also on rice with raw eggs.
Lightly pasteurized, unpasteurized type
This light soy sauce is made from domestically produced soybeans and wheat in a wooden barrel. It is also a raw type that has not been pasteurized. The saltiness comes later, so it feels a little gentle. The balance of saltiness and umami is excellent!
Organic JAS certified soy sauce made from whole domestic soybeans
Yamahisa is the pioneer of JAS-certified organic soy sauce. It is made from organically grown soybeans and wheat, and is carefully matured over two summers. The sight of over 150 wooden barrels lined up is overwhelming. For those who are particular about ingredients.
A long-established store on Shodoshima with over 150 barrels
The soy sauce that was made over a year and a half is used instead of salt water and then brewed again for another year and a half. It is made using domestic soybeans and wheat and fermented and aged in cedar barrels. It is recommended to use it with meat or in cooked dishes.
