Shokunin Shoyu No. 3042

A must-have fridge favorite

It's no exaggeration to say that this sesame sauce is my favorite in the Shokunin Soy Sauce Pantry. I had never really found a sesame sauce that I was completely satisfied with, but this one has become a must-have bottle in my refrigerator all year round.

The sesame flavor is rich and mellow.

Each bottle of sesame sauce contains approximately 30,000 sesame seeds, making it incredibly rich! The main ingredients are sesame paste, sugar, and Taihei whole soy soy sauce. Instead of brewed vinegar or thickeners, apple cider vinegar and agar are used to create a rich, slightly sour finish. Garlic and sesame oil are also added, giving the sauce a deep flavor.

The possibilities are endless

Sesame sauce is a great dipping sauce for shabu-shabu and hot pot dishes, but it would be a waste to use it just for that. With just a little extra effort, the uses are endless. It goes well with a wide range of ingredients, including meat and vegetables, as well as tofu and noodles, so it can be used in a variety of dishes. If you have leftover sesame sauce and are at a loss as to what to do, be sure to try it out in a variety of ways.

Mellow noodle soup with a fragrant sesame flavor

If you're tired of regular noodle soup, we recommend adding sesame sauce. It goes great with any type of noodle, including udon, somen, and chilled Chinese noodles. You can use it as a dipping sauce or a pouring sauce, depending on your preferred ratio.

This variation is my summer staple. When your regular mentsuyu is a little lacking, just add a spoonful of sesame sauce and you'll have a restaurant-quality taste. If you like it really strong, I recommend adding more sesame sauce. It'll be mellow and richer. If you have both regular mentsuyu and sesame sauce on hand, you'll never get bored of eating summer somen noodles!

Addictive spicy sauce

Simply combine sesame sauce with chili oil for a simple and delicious dish. If you boil the chicken the day before until it's soft, you can have the dish ready in no time! If you have time, add some finely chopped green onions. (Just that will instantly make it feel less like you're making shortcuts.) It's a feast, even though you barely put in any effort.

This combination is irresistible for spicy food lovers. The spiciness of the chili oil and the richness of the sesame sauce are exquisite, and it goes well with the cucumber garnish, as well as salads and cold tofu. I haven't tried it yet, but I'm sure it would be great to use "edible chili oil"! I'll give it a try next time!

Mellow sesame mayonnaise sauce

As you can probably imagine, sesame sauce and mayonnaise go perfectly together. It creates a rich, creamy sauce that's a little different from commercially available sesame dressings. If you use it with shrimp mayonnaise, the sauce clings tightly to the shrimp, creating a dish that looks and tastes just like it came from a restaurant.

This mellow sesame mayonnaise sauce is truly versatile. Of course, you can dip it in raw vegetables, but my recommendation is to mix it into potato salad. Its addictive creaminess will elevate your usual flavor! If you want to go the extra mile, add chopped pickles for a tartare-like flavor. It's also delicious when used in sandwiches.

Easy Rich Sesame Dressing

When using it as a dressing, dilute it with a little oil and drizzle it over the dish. It's fun to see how the flavor can be varied depending on what oil you use, so I've tried sesame oil, olive oil, rice bran oil, etc., and they're all delicious. The sesame sauce is quite rich, so you can add vinegar to make it more refreshing depending on your mood.

After a customer told me that it goes well with shredded daikon radish, I started using it more often in daikon radish salads. Of course, it's also great with lettuce and cucumber, and in the summer, it's great for chilled shabu-shabu salads.

Refreshing sesame ponzu sauce

This sauce combines the rich flavor of sesame sauce with the refreshing aroma of ponzu, taking advantage of the best of both worlds. It may be a little surprising, but for those who prefer something lighter, this combination is recommended! The richness of sesame is complemented by the refreshing citrus acidity and aroma of ponzu, leaving a very refreshing aftertaste. A 1:1 ratio is fine, but personally, I prefer a little more sesame sauce.

In addition to boiled dumplings, this sauce also goes well with boiled tofu, and in my house, we also use it with steamed vegetables. Once you try this refreshing sesame ponzu sauce, you'll be hooked. Please try it with your favorite dishes!

Miso sesame sauce with lots of umami

You can also use sesame sauce in simmered dishes as a mixed seasoning. By using sesame sauce, you can easily bring out the rich, deep flavor of sesame and miso! It gives a slightly richer finish than your usual simmered dishes. You can choose your favorite miso. It has a slightly richer flavor, so it can be used as both a side dish and a snack.

The sticky taro is coated in miso and sesame sauce, which is the best. I also love how the rich flavor permeates the juicy eggplant, and I also love root vegetables like lotus root and burdock, which bring out their sweetness and richness, but I also recommend trying deep-fried tofu. The umami of the soybeans is perfectly matched with the flavor of the miso and sesame sauce.

Punchy grilled sauce

This is highly recommended for marinating meat or as a dipping sauce. Just adding garlic and pepper instantly gives it an ethnic feel. In reality, it is supposed to be marinated in many more seasonings and spices, but for enjoying it at home, sesame sauce is enough. Applying more dipping sauce while grilling will make it even more delicious.

It can be used to season yakitori, grilled meat, and stir-fried vegetables! The rich flavor of the sesame sauce forms the base, so you can quickly create a flavor without having to prepare a variety of seasonings.

Is there a way you'd like to try it?
Sesame sauce can be used as is, of course, but with just a little modification, it can be used in a wide variety of dishes. This is an adjustment that is only possible with Taihei's rich sesame sauce.
Each variation adds a little extra depth and richness to your flavor, making your everyday dishes a little more special. Feel free to try them out with the seasonings you have in your fridge to find your favorite combination!
