Favorite food: corn.
Shokunin Shoyu No.
Product Description
His favorite food is corn. Sakae Soy Sauce Brewery / Sakae Soy Sauce "The fruity aroma comes from the microorganisms in the brewery. The charred soy sauce brings out the sweetness of the corn. Enjoy the taste of a street stall." Natural brewing using domestic soybeans brewed in wooden barrels.
Features
This has been the norm for Sakae Soy Sauce for 200 years. The microorganisms in the brewery create a subtle fruity aroma. They can be used on both meat and vegetables.
How to use
Ingredients: soybeans (non-GMO), wheat, salt. Continuing to evolve the techniques cultivated since the Edo period, seventh-generation owner Fukaya Masuhiro says, "We've been so committed to using only domestically produced soybeans, wheat, and salt, and have continued to use the traditional wooden barrel brewing method, that I feel we've finally earned public recognition, albeit belatedly."
Recommended usage
I believe that what supports Sakae Soy Sauce Brewery's soy sauce is the balance between precision backed by data, such as constantly inputting numerical values into a computer and the intuition of the craftsmen.
Important points to note
A well-balanced, dark flavor. Sakae soy sauce is carefully aged in wooden barrels for a year and a half. It has a slightly stronger flavor and an excellent balance of umami, sweetness, bitterness, saltiness, and sourness, making it a great choice for those who want to add a strong soy sauce flavor to their cooking.
