When it comes to soy sauces for egg-on-rice, most people think of dashi soy sauce, but the flavor of dashi and soy sauce is quite strong.So, this Usukuchi Tamagokake was created with the theme of "enjoying the egg itself" rather than the flavor of dashi or soy sauce.


Light soy sauce is the best way to bring out the best in your ingredients

Light soy sauce looks light and has a strong salty taste, but its characteristic is that it brings out the best in the ingredients. Suehiro Soy Sauce in Tatsuno City, Hyogo Prefecture is a long-established light soy sauce maker. President Takuya Suehiro and his son Tsutomu interviewed clients about dashi stock, and after researching dashi stock, they repeatedly made more than 10 types of prototypes. They then conducted a survey of customers using three types of soy sauce from the results.

I made repeated adjustments until I was satisfied with the result.

At first, we were worried that the Shiitake mushroom stock version of Ver.4 would be relatively unpopular, but to our surprise, we received many enthusiastic responses saying, "This is great!" After consulting with Suehiro Shoyu, we made more prototypes with the aim of completing the product by making fine adjustments to the lines of Ver.2 and Ver.4. Tsutomu made repeated fine adjustments until he was satisfied, and the number of prototypes reached 19!


Shiitake mushroom stock is the key!

Taking customer feedback into consideration, we finally completed this bottle after much trial and error to enjoy the eggs themselves. There are many soy sauces for eating with raw eggs on rice, but I feel like there aren't many that use shiitake mushroom stock. In order to extract as much shiitake extract as possible from the natural stock, we also devise a method of boiling it. However, to be honest, shiitake mushroom stock is a matter of personal preference. It is true that there are people who say, "I absolutely can't stand shiitake mushrooms! I don't like them!" However, for those who say, "I bought some high-quality eggs and want to be particular about the soy sauce," this is the soy sauce I would most highly recommend.
