"Eso" is a fish that is considered to be the highest quality ingredient for fish paste products. This fish sauce has no strong smell and was created by applying soy sauce brewing techniques in collaboration with Ichibiki, a long-established soy sauce manufacturer. It can be enjoyed either as a dipping sauce or a pouring sauce over food.

Yamasa Chikuwa was founded 190 years ago. It handles everything from filleting the fish to sales. The development of eso fish sauce was initiated by Yamasa Chikuwa Managing Director Sato and President Nakamura of Ichibiki, a long-established soy sauce company located 10 minutes away by car, at a high school reunion. Ichibiki had also attempted to make sardine fish sauce 30 years ago, but had been troubled by the distinctive smell. They decided to work together and started a fish sauce project using eso, a top-quality ingredient for fish paste products.

After comparing the taste of fish sauces from Japan and abroad, he noticed that they had a particular smell. Improving this smell became one of his themes. At first, he had many failures, and after repeatedly throwing away the fish, he realized that it had something to do with the freshness of the fish.

Ordinary fish sauce is salted, and initially, fish filleted at Yamasa Chikuwa were brought to Ichibiki for salting, but salting the fish at the point of filleting at Yamasa Chikuwa significantly reduced the smell. By adding soy sauce koji, lactic acid bacteria, and yeast and fermenting it, a fish sauce without a strong smell was created. It feels like a taste that was made possible by the collaboration between Yamasa Chikuwa, which values ​​the freshness of its ingredients, and Ichibiki's research and development technology.

Generally, when we think of fish sauce, we think of it being used in hotpots and stir-fries, but since it doesn't have a strong smell, Eso fish sauce can be used as a seasoning to bring out the best in ingredients, whether you pour it on or dip it in. If you taste it as is, it's fish sauce, so it feels saltier than soy sauce, but when you pour it on something, you can taste the sweetness of the ingredients. Because it's full of the umami flavor of Eso, we recommend using it like a refreshing dashi soy sauce.
