Suehiro Soy Sauce is one of the few breweries that produces naturally brewed light soy sauce. One day, after spending days thinking about how they could get more people to use light soy sauce, they came across the following scene.
"I saw someone at a restaurant sprinkling salt on the food before serving it. It's nothing out of the ordinary, but eating it with salt really brings out the flavor of the ingredients. That's right, light soy sauce has a strong saltiness and little umami flavor. Could this be the soy sauce that best allows you to experience the flavor of the ingredients?!"
Soy sauce to bring out the best in ingredients
This decided the concept of making "Kakeru Usukuchi" soy sauce. The good thing about light soy sauce is its beautiful color. It is not overly assertive as a soy sauce, and if you taste it as is, it is quite salty. The challenge was to find the right balance to keep the good aspects while reducing the saltiness a bit and bringing out the flavor of the ingredients. This was the challenge.
That's where they turned to rice malt. Many people know that amazake and other sweet drinks get their sweetness from the power of rice malt, and they wondered if they could use this in their drinks. There are usually light soy sauces that add amazake, but they tried to achieve their ideal taste by using a larger amount and creating a method that resembles making amazake with light soy sauce.
Start with tofu and white fish sashimi
Its power really shines when applied to delicate ingredients. When combined with delicious silken tofu, which also has the sweetness of soybeans, the delicate aroma and flavor are further enhanced. For sashimi, it also goes well with white fish such as sea bream and flounder, as well as scallops and sweet shrimp.
Refreshing meat
Meat goes well with rich soy sauce that can stand up to its umami, but if you want something lighter, try pale purple. It goes especially well with gyoza, which have a light and refreshing taste, so you can use a lot of vinegar soy sauce. In the case of steak, if you have good quality meat, you can enjoy the taste of the meat itself with wasabi soy sauce.
Alternative to salt and lemon
Pale purple goes well with not only Japanese food, but also Western food. It goes well with fries, carpaccio, and other dishes that you want to eat with lemon or salt. It is also recommended to mix it with olive oil to make a dressing. The saltiness is enhanced by the flavor of soy sauce, making it even more delicious.
