Three-stage re-brewed soy sauce
This soy sauce is made using domestically produced soybeans, wheat, and rice, and is brewed three times. This is the soy sauce from Suehiro Soy Sauce's popular "Purple Soy Sauce Series" that was so loved by a Shokunin Shoyu staff member when they visited the brewery that they decided to sell it.
Because it is re-brewed, it is rich and deep, but you can also taste the sweetness of the rice malt that is unique to Suehiro Soy Sauce, and it has a light and mellow flavor. There are other breweries that make re-brewed soy sauce by adding rice malt and water-based sweet sake, but Suehiro Soy Sauce soaks its own homemade rice malt directly into the kiage soy sauce, creating a mellow flavor through fermentation and saccharification. This allows you to taste the sweetness of the rice even more.
Fragrant grilled rice balls
There are several soy sauces that are recommended for grilled rice balls, but for those who want a natural sweetness and aroma, I recommend dark purple. The aroma that wafts through the air while grilling is irresistible. If you make grilled rice balls on your day off and freeze them, you can easily cook them in the microwave even on busy mornings. They are rich yet light, so you can eat them all in one go even on a sleepy morning.
A stylish sauce to go with meat
Re-brewed soy sauce goes well with meat. You can pour it on as is, but why not try making a stylish sauce with a little extra effort? Just mix equal amounts of dark purple soy sauce, balsamic vinegar, and butter, simmer for a little, and you'll have a rich sauce! This light and mellow re-brewed sauce balances well with the vinegar and butter, and also brings out the flavor of the meat itself. Perfect for roast beef, steak, hamburger, etc.
