A dashi soy sauce based on organic soy sauce. It uses plenty of bonito stock, Noto squid fish sauce, Kikaijima raw sugar, and authentic Mikawa mirin. It can be used as is on rice with raw egg or natto. It can also be diluted to make noodle soup or oyakodon.

Bringing JAS-certified organic soy sauce made in wooden barrels to the world

Adachi Brewery's factory is JAS organic certified. Many manufacturers now have this certification, but when Adachi Brewery obtained it, most of the manufacturers were large. Small and medium-sized manufacturers were rare.

Only products that meet the JAS (Japanese Agricultural Standards) standard for organic agricultural processed foods set by the Ministry of Agriculture, Forestry and Fisheries are allowed to display the organic JAS certification mark. Products without this mark cannot be labeled as "organic." Furthermore, the brewery has obtained international organic certification from the US and EU, making it popular overseas.

The key point is that the soy sauce brewed in a wooden barrel is made with plenty of bonito flakes and Noto fish sauce (ishiru) as a secret flavor. Other carefully selected ingredients are also used, such as raw sugar from Kikaijima and Mikawa mirin. No chemical seasonings are used at all.
