Should I eat it with soy sauce or dashi?
The soy sauce used exclusively with raw egg on rice is generally dashi soy sauce based on bonito stock or kelp stock, but the taste can vary greatly depending on whether it is based on rich tamari soy sauce or white soy sauce that brings out the best in the ingredients.
For pure soy sauce that is not dashi soy sauce, if you want to bring out the soy sauce flavor, try a rich soy sauce such as tamari soy sauce, which is based on the general dark soy sauce. If you want to bring out the egg flavor, it is popular to try white soy sauce.
