How to use
Ingredients: soybeans (domestic), wheat (domestic), salt A long-established Akita company that makes soy sauce using only human eyes and hands, without relying on machines. You can't make good soy sauce without good koji...which is why making koji in the winter is said to be the most important part of soy sauce production.
Recommended usage
Making koji using koji lids requires a lot of manpower and effort, as hundreds of koji lids must be rearranged and the koji inside must be loosened by hand one by one.
