Ono City in Fukui Prefecture, with its vast forests, is a treasure trove of spring water. The city is known as a town of famous water, with many springs including "Okiyomizu," which has been selected as one of the 100 famous waters in Japan. The brewing industry has developed thanks to this wonderful water. Nomura Soy Sauce was founded in the early Meiji period, and in addition to sweet soy sauce, it continues to produce naturally brewed soy sauce at one of the few breweries in the region that uses whole soybeans and is involved in the making of koji.
Uses green soybeans from local soybean producer "Yui Farm"
You may not be familiar with the term "green soybeans." Green soybeans are characterized by their deep green color, large size, low fat content and high sugar content. They are often used in high-quality tofu and kinako (roasted soybean flour), but production is low and you will rarely see them in general.
"Aomame Soy Sauce" is made by natural fermentation for two years in the climate of Ono City to make soy sauce that makes the most of the sweet flavor of green soybeans grown with reduced pesticides and organic fertilizer by local soybean producer "Yui Farm". It has a nice fragrance and a light taste, so it can be used as a soy sauce for pouring on top of other ingredients, and its gentle soy sauce flavor will bring out the best in your ingredients when used in cooking.

When you cook stews with green soy sauce, the soy sauce flavor is gentle and mellow, and it doesn't feel too salty, so it brings out the umami and sweetness of the ingredients. I especially recommend it with meat tofu. You can really taste the umami and sweetness of the beef and vegetables such as mushrooms. The tofu is soaked in soy sauce, but it doesn't feel heavy at all.
