Yoshimura Brewery's masterpiece. A classic Kagoshima sweet soy sauce with a good balance of rich umami and deep sweetness, it is a non-thick soy sauce. It is popular among people in the Kanto region as it is easy to adjust the flavor of dishes and can be used to make simmered dishes delicious.

It is affectionately known locally as Sakura Kaneyo.

"I don't want to work at a regular soy sauce maker. I want to create a system for the entire Yoshimura Brewery and bring it all together under the Sakura Kaneyo brand. I also think that the appearance of the label and how we explain it are important to ensure that our thoughts are fully conveyed in our products," says fourth-generation soy sauce maker Koichiro Yoshimura.

The interior of the store is stylish, as are the product labels and instructions.

This direct sales store was renovated from a rice storehouse dating back to the Edo period. The large white noren curtain is striking, and more than 30 types of soy sauce are stylishly displayed inside the store. In addition to selling soy sauce, the store also sells soy sauce by weight, soy sauce soft serve ice cream, and shinko dango. Further inside is the eat-in space. Everything is stylish, from the shelves displaying books introducing Kagoshima and miscellaneous goods such as soy sauce dishes, to the product descriptions. The neat and tidy space makes it hard to believe that this is a direct sales store from a soy sauce store.

Even the cardboard boxes used for delivery are stylish

The cardboard boxes are all white, and feature an illustration of "Ot no Combo," which means "Okiagari Koboshi" in Kagoshima dialect, showing the attention to detail.

First, use it for meat and potato stew.

It has a good balance of rich umami and sweetness, so you can make meat and potato stew delicious on its own without adding any secret ingredients. Many repeat customers in the Kanto region say that they don't like sweet soy sauce as a regular topping, but when they cook, it just doesn't taste good without this soy sauce.

It is a sweet soy sauce without any thickening, so it is not heavy.

If you like sweet soy sauce, you can of course use it as a dipping sauce. It is not as thick as other Kagoshima sweet soy sauces, so it doesn't linger in your mouth. It has a distinct umami and sweetness, but is not heavy.

It is also recommended for making soy sauce pickles such as shiso leaves. When lightly pickled, it gives off a nice sweetness and a well-balanced flavor while still retaining the freshness of the shiso leaves.
