Shichifuku Brewery, the first to make white dashi in Japan

Shichifuku Brewery is the first brewery in Japan to make white dashi, and continues to take on cutting-edge initiatives, such as being the first in the industry to receive JAS organic white soy sauce certification. Their commitment to ingredients and thorough environmental maintenance at the manufacturing site are impressive. You can also tour the factory, named "Arigato no Sato."

"Shiro-dashi" is white soy sauce made with organic ingredients and dashi added.

I first encountered shiro dashi over 20 years ago. The morning after staying over at a friend's house, the egg porridge my friend whipped up for me was so delicious, it was made with shiro dashi. "All you need is this seasoning, it's simple," I was told, so I immediately went to the supermarket to look for it.

Since then, white dashi has become an indispensable item in my refrigerator, but at the time I didn't even know that it was made from white soy sauce. Shichifuku Brewery's white dashi is made from the only organic white soy sauce in Japan.

The soup stock is made with thickly sliced dried bonito flakes and shiitake mushrooms.

When he explained to a business partner that "the bonito flakes we use are honkarebushi," he was told, "Don't lie!" It would make sense if a restaurant were using it, but there's no way it would be used in processed soy sauce products.

He even came to the site to check it out. "We make good products. To do that, we need to use good ingredients," said President Inuzuka. "There are also cheap white dashi on the market, and the price difference can be several times higher. However, in order to live up to the trust of our customers who choose Shichifuku products, we tell them that we don't want to lower the cost of ingredients, but rather to raise it."

Use the flavor and color of this dish in soups and omelets.

First, please try it with a simple soup. If you dilute the white dashi 16 times, it will hardly take on any color. However, the gentle flavor of the dashi will spread throughout your mouth. As well as the soup, we also recommend trying tamagoyaki. Simply add an appropriate amount of white dashi and water to beaten eggs and fry them to create an authentic rolled omelet with a strong dashi flavor and a beautiful yellow color of the egg.

White soup stock for Japanese-style spaghetti

After I found out that my favorite restaurant adds Japanese-style dashi to their peperoncino, I tried to make it at home by adding powdered dashi, but white dashi is the perfect match for Japanese-style spaghetti with lots of mushrooms! It's quick and easy to make, so it's perfect for a weekend lunch.

A staple in my home: simple light pickles

Pickles can be made in no time with white dashi. It has a strong dashi flavor, is simple and very delicious. White dashi is always helpful because it is a delicious way to use up leftover vegetables. You can also add chili peppers to your liking. Personally, I like lightly pickled celery the best.
