Soy and wheat-free soy sauce

We are often asked by customers, "Do you have soy sauce that is free of soy and wheat?" When we talk to them, we learn that they cannot use soy sauce due to allergies. For such people, we recommend "broad bean soy sauce." For those with wheat allergies, we can suggest tamari soy sauce made only from soy and salt, but if soy is also free, the options are limited.

What does broad bean soy sauce taste like?

This broad bean soy sauce is, well, pretty much just plain soy sauce. It has a broad bean-like aftertaste, but I think many people wouldn't be able to tell the difference from regular soy sauce unless they were told.

Comparing broad bean soy sauce with regular soy sauce

I tried it with tofu and natto, two classic soy sauce recipes, and it was just as delicious as regular soy sauce. I don't think most people would notice unless they were told. The broad bean soy sauce has a more subtle, lighter soy sauce flavor, and there is a slight difference in the aftertaste, but you wouldn't notice it unless you compared them side by side.

I used it in my usual cooking

I wondered how it would taste in cooking, so I made ginger pork and soup. Without telling my family, I set them on the table as usual and watched them... and just as I expected, no one noticed!

When I confessed that it was actually made with broad bean soy sauce, she was surprised and muttered, "Even if you say that, I can't tell the difference from usual..."

Broad bean soy sauce contains yeast specifically for soy sauce. Yeast is the same as yeast, but it seems that yeast used in bread is generally referred to as yeast.
