Sanbaizu is a versatile vinegar made with a perfect balance of brewed vinegar, light soy sauce, sugar, and dashi. It has a mild, slightly sweet taste, yet is packed with flavor. This wonderful product is made by Kubo Brewery, located in the center of the Osumi Peninsula in Kagoshima Prefecture and affectionately known as Yamakyu. I'd like to introduce some of the delicious dishes I often make using vinegar, which can be used for anything. Please use it as a reference for your own menu.

[All you need for seasoning] Vinegared food that's not too sour

My mother's go-to dish is vinegared dishes. There's always some kind of vinegared dish in the refrigerator at my parents' house, and while she enjoys the classic combination of cucumber and wakame seaweed, she also enjoys changing the ingredients depending on the season and what's in the fridge, such as crab sticks, whitebait, or octopus. It's also a great snack for my father. I find it very useful when I can't decide on a side dish or want one more dish.

Sanbai-zu is refreshing yet has a gentle sweetness and is not too sharp, making it easy to eat even for those who don't like vinegar.

[One seasoning] Refreshing and delicious yellowtail teriyaki

I found this recipe on Kubo Brewery's website, and to be honest, I was skeptical at first, wondering, "Is this really all I need?" I usually season my yellowtail teriyaki with a lot of soy sauce, mirin, and sugar, so I was a little surprised at how simple the recipe was, but I decided to give it a try.

This was a great choice! It has a rich flavor but a refreshing aftertaste, and is not as heavy as regular teriyaki, so you'll find yourself eating more and more. If you'd prefer a stronger flavor, we recommend adding a little soy sauce.

Just add a little sesame oil to this vinegar and you'll have a Chinese-style dressing ready in no time. It's super easy to make, and the perfect balance of sweetness and tartness makes it a great way to eat lots of vegetables. The great thing about this recipe is that it's easy to make with just two ingredients and you can just eyeball the measurements, even on busy days!

My favorite is a simple yet timeless combination of cabbage, cucumber, and shredded ham. If you want to add a bit more volume, I recommend adding chicken breast or tofu.

Senmaizuke is my husband's favorite dish. Until now, I'd make it by mixing vinegar, sugar, and salt and adding kelp, but since discovering this vinegar, I've relied solely on it. All I have to do is cut the ingredients and let them pickle, and I can make it quickly and with the same flavor every time, which is really great! The red chili pepper tightens the dish, giving it a mature flavor.

Furthermore, by adding black pepper and bay leaves, you can easily make Western-style pickles. I often make these when I can buy celery cheaply. It's great that you can easily enjoy them in a variety of ways to suit your taste!
