How to use
Ingredients: Wheat, salt, soybeans, defatted processed soybeans/alcohol, vitamin B1 Shiro soy sauce brewed in wooden barrels by a long-established company founded over 200 years ago Many people may not be familiar with shiro soy sauce, but it is an even paler amber color than light soy sauce, and is unmatched when it comes to bringing out the colors of fresh ingredients.
Recommended usage
White soy sauce is made with 90% wheat and 1% soybean, and has little soy sauce flavor and is high in sugar.
Important points to note
Yamashin Shiro Soy Sauce is made by extracting the liquid that has accumulated in a barrel through a plug called a "nomiguchi" that is attached to a hole in the bottom of a barrel called a "kibiki," then adding 100% of the amount of salt water to the koji that remains from the kibiki and leaving it for a further three months. The resulting liquid is then pressed together with the moromi, which becomes the second pressing. The first kibiki and second pressed soy sauce are then blended before being bottled.
